Simply Delicious - Lettuce, cherry tomato & avo wrap

 

Preparing this meal is easier and quicker than ordering delivery or waiting in the drive-thru – plus it is healthier and far more tasty.

 
 

For this recipe, you'll need:

  Oven preheated to 180ºC, if your ready-made wraps need to be heated
3 large lettuce leaves, chopped
1 handful of cherry tomatoes, halved
¼ green bell pepper, finely chopped
4 baby gherkins, thinly sliced
3 peppadews, finely chopped
1 handful of mozzarello, cut into 1cm cubes
  assorted sprouts e.g. raw peanuts, alfalfa
4 teaspoons fat-free chunky cottage cheese
1 avocado, sliced length ways
  dhania, stalks removed or fresh basil leaves, torn
  light mayonnaise (optional)
4 wraps (e.g. burrito, roti)
   

To make the wraps

1. Depending on the type of wrap you're using, you may have to heat them in a pre-heated oven.

2. While the wraps are heating, prepare all the ingredients so you only have to throw a bit of everything into the wrap. Wash, chop, slice the ingredients. Put everything on a plate or in dishes.

3. Remove the wraps from oven (if used) and place one wrap per plate. Grab a bit of everything and put it in the center of the wrap.

4. Add a teaspoon of cottage cheese and optionally, a little mayonnaise.

5. Fold the wrap and use a toothpick to hold it together.
